Culinary Cookbook: Peach Cobbler


This recipe is special to me because it was the first recipe that I learned with my grandmother. I would always help her cook Sunday dinners growing up, but it wasn’t until I was about ten years old when she made peach cobbler with me. Over the years we continued to make this dish together- just like when I was a kid. The only difference now is that she requests I make the peach cobbler for her. So each year during the holidays I make a peach cobbler for my grandmother.

Ingredients

Filling

  • 6 large peaches, cut into thin wedges

  • 1/4 cup sugar

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon cornstarch

  • 2 tablespoons vanilla flavoring

Topping

  • 1 cup all-purpose flour

  • 1/2 cup sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3/4 stick cold unsalted butter, cut into small pieces

  • 1/4 cup boiling water

1. Cook peaches and mix in a Preheat oven set at 425°F for 10 minutes

(Toss peaches with sugar, lemon juice, vanilla flavoring and cornstarch in a 2-qt. baking dish and bake in middle of oven.)

2. Make the topping while peaches bake.

(Stir together flour, sugar, baking powder, and salt. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in water until just combined.)

3. Remove peaches from oven and drop spoonfuls of topping over them.

4. Bake in the middle of the oven until topping is golden, about 25 minutes.
